Pork chops tend to be under-rated. While I do enjoy chicken and fish, I do want something a bit different from time to time. Pork chops are just as versatile as chicken and can be prepared just as quickly. I try to keep both thin and thick cut chops on hand. Thin chops can be grilled or pan cooked very quickly when a fast meal is needed and thick chops are great for those slow cooked or baked dishes. Chops can be seasoned in many different ways so possibilities are almost endless. Pork chops deserve a book of their own. Enjoy!
