Anita, My husband is also diabetic and I too use Splenda in all my recipes calling for sugar. Can't even tell the difference.

I have been using Splenda to bake since it first appeared and it works beautifully. I have found that I like Splenda much better than sugar. Don't use it like it says on the package though, it doesn't work. Just measure it like you measure sugar. It's a little sweeter than sugar, so if anything, measure a little light (ie: take 1/8 to 1/4 away from 1 cup).

My husband is diabetic. They have a sugar free chocolate cake and brownie mix. They are made with Splenda. Would like to try this with those mixes.
