Lizzy’s Famous Pecan Chicken Salad

“Back in the early 2000’s I went out to eat with my Grandpa Klepper, and he was telling me about a chicken salad sandwich that he had fallen in love with and wanted me to try it, so I did. I thought to myself, I could so make this ten times cheaper and than what it would cost to buy just one sandwich. So I looked over the salad and determined that I had most of the ingredients in my own kitchen and I could venture out and make my own. I am so glad I did, now it’s a HUGE hit with family and friends. I even made this for my own wedding reception dinner and got rave reviews. Enjoy!” – Elizabeth

Fancy Tuna Salad

“When I was a teenager my mom would make these “fancy” tuna salad sandwiches when I had friends come for a sleepover. I still love to make this for a twist on the usual tuna salad sandwiches. I left the mayonnaise amount blank because all you really need to do is make the salad spreadable. You will change the taste of the salad depending upon whether you use Miracle Whip or real mayo. I prefer real mayo because it isn’t as sweet. I don’t find that it needs any added seasonings, but the field is wide open for experimenting with different additions. You might make yours fancier than mine!” – Paula
