Sweet Potato Casserole with Pecan Topping
1 can(s)(29 oz.) canned yams, drained or 3 cups of cooked sweet potatos
1/2 cbutter, melted (1stick)
1/2 cgranulated sugar
5 Tbspbutter, melted
3/4 cdark brown sugar
2/3 cflour ( + 3 tbsp. of flour)
1 1/2 cpecans, chopped and halved
How to Make Sweet Potato Casserole with Pecan Topping
- Mashed and drain sweet potatoes in large bowl. Add butter, sugar, milk, eggs and vanilla and beat well.
- Pour into 8x11" baking pan, or square pan.
FYI: Recipe can be double for 9x13" pan, just double each ingredient!
- For Topping:
Combine all ingredients except pecans and stir well. Fold in pecans. Using your fingers, crumble topping over sweet potatoe mixture.
- Bake @ °350 for 30 mins for square pan. Bake until the middle is set.
Bake longer if recipe is doubled, for about 45min. Or until middle is set.
