Bacon Bleu Brussels Sprouts with Mustard Sauce

FOR BRUSSELS SPROUTS
fresh or thawed frozen brussels sprouts cut in half
freshly cracked black pepper
FOR THE MUSTARD SAUCE
thick cut bacon-cooked, crumbled-set aside-reserve 4 tblsp of bacon drippings
FOR THE TOPPING
blue cheese crumbles or feta, or goat cheese
toasted almonds pecans or walnuts
How to Make Bacon Bleu Brussels Sprouts with Mustard Sauce
1Pre heat oven to 375
Coat brussels in olive oil salt & pepper.
Roast until very deeply golden brown and tender.
2In a frying pan-fry bacon-set aside cooked bacon and crumble
Reserve 4 tblsp of bacon grease.
In warm pan, add shallots and cook until tender absorbing bits from pan.
Whisk in mustard, reserved bacon grease and remove from heat.
Drizzle olive oil to form a dressing.
3In a serving dish, toss brussels with dressing.
Crumble atop with bacon and blue cheese.
Serve warm! Enjoy!
