We feel like Brussels sprouts are a very misunderstood veggie. This recipe is hearty enough you could eat them as a meal. The Brussels sprouts are roasted until they're crisp on the outside. When tossed with the tangy dressing and savory cheese and bacon, this is one fabulous side dish. Toasted nuts on top add a little it of nuttiness to the sprouts. We'll definitely be serving this one to guests.

Ingredients For bacon bleu brussels sprouts with mustard sauce

  • FOR BRUSSELS SPROUTS
  • 2 lb
    fresh or thawed frozen Brussels sprouts, cut in half
  • 4 Tbsp
    olive oil
  • sea salt
  • freshly cracked black pepper
  • FOR THE MUSTARD SAUCE
  • 1 lb
    thick cut bacon-cooked, crumbled-set aside-reserve 4 Tbsp of bacon drippings
  • 4 Tbsp
    diced shallots
  • 3 Tbsp
    Dijon mustard
  • drizzle of olive oil
  • FOR THE TOPPING
  • 1/4 c
    Blue cheese crumbles or Feta, or goat cheese
  • 4 Tbsp
    toasted almonds pecans or walnuts

How To Make bacon bleu brussels sprouts with mustard sauce

  • Brussels sprouts coated in olive oil, salt, and pepper.

    Preheat oven to 375. Coat Brussels in olive oil, salt & pepper.
  • Brussels sprouts roasting in the oven.

    Roast until very deeply golden brown and tender (around 25-30 minutes).
  • Crumbled bacon on paper towels.

    In a frying pan, fry bacon. Set aside cooked bacon and crumble. Reserve 4 Tbsp of bacon grease.
  • Cooking shallots in a pan.

    In a warm pan, add shallots and cook until tender absorbing bits from pan.
  • Whisking in mustard and bacon grease.

    Whisk in mustard and reserved bacon grease; remove from heat.
  • Drizzling in olive oil.

    Drizzle olive oil to form a dressing.
  • Pouring dressing over Brussels sprouts.

    In a serving dish, toss Brussels with dressing.
  • Bacon and blue cheese on top of the Brussels sprouts.

    Crumble bacon and blue cheese on top. Serve warm. Enjoy!
