1Preheat oven to 375 degrees.
Using a small sharp knife, cut a slit in each chicken breast to create a pocket about 4 inches long.
2In a small bowl, combine the stuffing ingredients. Stuff each breast with one quarter of the mixture. Season with salt and pepper.
3On a plate, combine the breadcrumbs and pecan chips. Dip each piece of chicken into the egg, then dredge in the breadcrumb mixture.
4Heat a little oil in a large nonstick oven-proof skillet over medium heat. Cook chicken on each side for 3-4 minutes.
Transfer to the oven and bake for 16 to 20 minutes, or until chicken is cooked through.
