“This was very good. I usually plan our meals two or three meals ahead, so this dish was perfect for us. There is just the two of us so I bought a rotisserie chicken from the market, we ate half of it for the first meal with a vegetable and a small fruit salad. That same evening I prepared my rice, (2 cups uncooked to equal 4 cups cooked), fluffed it and set it off to the side to cool, then popped into the refrigerator till the next day. The next day I "de-boned" the rest of the chicken, set aside 1 1/2 cups of it for this dish and made a couple of sandwiches out of the rest for our lunch.
