A gaggle of teens come over at the last minute? People show up to watch the game or you get home late and are starving? Dinner Nachos has been my answer. Super fast, feeds a lot, gets rid of leftovers and uses food usually on hand. They're great even when meatless. You'll probably think of other/more toppings. This dish almost never makes it to plates in my house as the family usually eats directly from the pan, all standing laughing around the island in my kitchen.

These were a BIG hit in the Test Kitchen! I made this with half ground chuck and half sausage - so many layers of yummy flavors. Great for a tailgate, movie night or a girls night in!

Ingredients For dinner nachos

  • 1 bag
    nacho chips- thicker kind
  • 2 c
    shredded cheddar or any cheese you have
  • 2 can
    chili beans or leftover/canned chili
  • 1 jar
    salsa
  • 1 or 2 c
    leftover cooked and chopped or shredded meat: chicken, hamburger, meatloaf, pork-whatever (optional)
  • 2 c
    shredded lettuce (optional)
  • 3
    chopped green onions
  • 1/2 c
    sour cream
  • 1/2 bunch
    fresh cilantro leaves, chopped

How To Make dinner nachos

    On large circular pizza pan, spread out the entire bag of tortilla chips. Pour the beans all over the chips and then the chopped meat. Sprinkle the cheese to mostly cover the chips. Bake in 400 degree oven until cheese melts and starts browning a little. Around 10-15 mins. (Make sure the beans are heated thru. I actually heat the beans prior to pouring them on the chips so I don't risk burning the cheese before they are hot enough.)

    When the pan is out of the oven, pour the salsa over the cheese, then sprinkle with the onions. If you choose to add the optional shredded lettuce, sprinkle that on now.

    Place the sour cream into a small Ziploc bag, release air before sealing. Snip the very tip of a corner in the bag and squeeze the sour cream out by spirals onto the platter of nachos. Garnish with cilantro.
