Fiesta Chili-Lime Con Carne

Football season is reaching the finale! I’m sad to say my team didn’t make it to the big game this year (again!). But that won’t stop me from having some friends over and having a party. Whichever two teams are left standing, I’ll choose a side to cheer on. Secretly, though, my favorite part of the day is really the yummy food.

Laura Harrison’s Bacon-Horseradish Chip Dip takes so little time to put together, but is big on flavor. “We have [this] at every family gathering,” says Laura. Well this dip has been added to my “must-make” list too. Horseradish is often overlooked and the flavor is a pure delight in this dip. This does serve a lot … which will be good if you have some big eaters on hand.

“This is great for a party,” says Shanda Bush about her Skillet Chicken Nachos. “You can make it and then put it in a crock pot to keep hot.” I love that this recipe is make it and forget it. When I get caught up in the game, I’ll know there is something to grab (that is if no one has eaten them all!). These nachos do pack a surprising punch, so be sure to adjust the spice to your liking.

With a bit of a bite, Jeanette Nelson’s Fiesta Chili-Lime Con Carne is the perfect game-day treat. “This hearty fiesta chili has just the right level of spice,” says Jeanette. Don’t let the list of ingredients scare you off – this is a super easy recipe to throw together.

No football party is complete without sliders, and Brenda-Lee Barajas’ Mini Sliders Burgers and Special Sauce are must serve. Brenda-Lee promises us “if you try these you will never go back.” The flavor combination in this recipe is just plain yummy! Depending on how you like your burgers, you may want to cut back on the cooking time. But DO NOT cut back on that secret sauce – it makes the burgers.

Melissa Sperka’s spin on potato skins is a nice addition to your munchie menu. Her Nested Potato Skins are so cute and tasty. What a fun idea – potato skins without the skins! “Potato skins are always a favorite appetizer to serve at parties and events,” says Melissa. You can make these bite-sized by using a mini-muffin tin and adjusting your baking time. Your friends are guaranteed to eat these up!

Wings are always on my game-day menu, and this year I plan on serving up Stephanie Rudy’s Crispy Sticky Oven Hot Wings. “My husband and kids love these wings,” says Stephanie. Well, apparently, my son also loves them. I overheard him telling Krissi that these are so good, we won’t ever have to go to a restaurant to eat wings again! Stephanie recommends doubling the recipe and you may want to. The flavors in these really are just perfect and your “eaters” may want a double batch!
