mock creme fraiche

This is a recipe I have use when I have ran out of sour cream It is out of one of my trusty cookbooks I have used through the years....I have used this with my cucumber salads and added dill to it...we have even used it when we have done our high teas.... French Chefs use the thick, slightly tart creme fraiche as a topping to take the place of sour cream. Also in sauces,as butter, in pastries and many other uses. This is low cal. 1 TBSP=11

Ingredients

  • 1 1/4 cups milk, skim (organic evaporated)
  • 1 cup yogurt, low-fat, plain (organic)
  • 1 1/2 teaspoons lemon juice, (organic)

How To Make mock creme fraiche

  • Step 1
    In medium bowl, combine, all ingredients, with beaters on high till smooth and peaks....Cover, let stand at room temp at least 6 hours....Refrigerate and serve well chilled...whisk before serving.
  • Step 2
    Store tightly covered in frig up to 5 days...
