I made this today for my family and it was a BIG hit! I made it with the caraway seeds, too. It was DELICIOUS!! The best Irish Soda Bread recipe I've tried. A keeper for sure!
I love the flavor of this bread. Even though I made it with Guinness instead of buttermilk, it turned out beautifully. Just shows you can do a lot with a good recipe!
Eleanor you can use what ever you have on hand. In the picture above, I use an old baking pan, that is why I covered it with aluminum foil. The pan was really old and beat up, but it is an air bake pan, and I love it. Of course you can bake it in something else. I think I did mention that in the recipe. I have a 15 inch cast Iron skillet and have used that before, but I also use shallow baking pans, they all will work. Thanks for your question. Have a nice day.
Why thank you. I promise you tho, I would have used a processor if I hadn't left half my kitchen in storage..in another state! The recipe is a keeper!! I'll be watching for more :o)
Shannon, that is such a wonderful affirmation of making this WITHOUT THE FOOD PROCESSOR. I knew it could be done, and you proved my point, because you had great results. Thanks for letting everyone know. I am sure as you said you had to use a little more elbow grease to get it all blended, but in the end you got the same results, so wonderful, thanks for sharing the info.
I made this today. Incredible. Moist. Delicious. Worth the effort even without a processor. Old fashioned Elbow Grease works fine. I will keep this recipe and make it for many years to come!!

Soaking the raisins in Whiskey Sounds great, and I am sure will add a more intense flavor to the bread. I just made last week IRISH ROSE WHISKEY CAKE by Lady Rose and the raisins are soaked in Irish Whiskey. You may also enjoy Andes Mint Chunk Irish Oatmeal Cookies they are both great recipes. Sounds like you are having an Irish Feast at your House. We will be too with the Irish Corned Beef & Cabbage Dinner the Brisket Flats are so expensive this year, but we will still enjoy it, I usually make at least 3 or 4 Briskets at a time. To try to give it my personal touch, I think I'm going to soak the raisins in Irish whiskey in place of soaking them in the water as per your instructions. I think it will go great with Irish coffee served at the end of my St. Patrick's Day dinner.
