Refreshing Lemon Treats

If there is one flavor you need to explore this spring and summer, it’s the tangy goodness of lemon. After one bite of refreshing lemon treats, your day will instantly be brighter. This week, I thought I’d spotlight five easy recipes that’ll put you in pure citrus bliss.

“This zingy and sweet muffin is the perfect way to start the day,” thinks Brenda Andrews (Bakersfield, CA) of her Lite Sunny Lemon-Raspberry Muffins. “I bake these with my daughters; the raspberry drizzle was my 17-year-olds idea!”

If you love lemon and raspberry, these are for you. This is a bran muffin with lighter ingredients and big flavors.

The muffin is moist and dense like a bran muffin but with pops of lemon and raspberry. The glaze takes these over the top. Perfect with your morning coffee.

The crust is made from crushed gingersnap cookies and butter. With its warm spice flavor, the crust is a nice contrast to the creamy bursting with flavor lemon mousse.

A topping of gingersnap crumbs, sugar, and slivered almonds adds a nice crunch to every bite.

Pound cake from scratch is tasty. Laura Davis’ (Rusk, TX) Lemon Lovers Pound Cake is an excellent recipe.

“This has a great fresh lemon taste,” reveals Laura. “Excellent for picnics or maybe even a potluck.”

Tender and buttery, this pound cake recipe is full of lemony goodness. The sweetness and tartness are a refreshing combination. Drizzled on top is an icing a little different than you’d expect.

Using sour cream and butter makes the glaze thick and rich. It’s a cross between a frosting and a drizzle. Alone the cake is good, but the icing makes it fantastic.
