Irresistible Coconut Recipes

Do you know what ingredient has been popular? Coconut! When we post a recipe on our Facebook page with coconut, so many people love it. And I know why… it’s delicious. This treat is for so much more than a pina colada, and these irresistible coconut recipes are worth a try.

When presented, Diane M.’s (Twin Falls, ID) Coconut Berry Macadamia French Toast looks almost too good to eat!

“I love nutty, loaded sweet stuff,” explains Diane. “This has all my favs all put together. Great for a brunch, party, or just for your sweetie.”

Diane suggests using strawberries or raspberries. In the Test Kitchen, we used both, and it was a delicious choice.

The macadamia nut and coconut coating on the bread gives a surprise crunch. As it fries to a golden brown, the coconut caramelizes a bit. If you like things sweet, add a touch more sugar because the filling isn’t overly sweet. This a fancy but easy French toast recipe.

“My husband and I went to Hawaii on our honeymoon and found Coconut Turnovers at a local fish market in Koloa,” shares Lisa Cancilla (Parlin, NJ). “I tried to find a recipe online, but I couldn’t, so this is what I came up with. My whole family loved them, and I hope you do too!”

I thought these coconut turnovers were divine. When you eat one, you bite into flaky layers of buttery pastry filled with a moist, sweet, and caramelized coconut center.

The turnovers have a tropical flair and would be delicious for breakfast, dessert, or a sweet treat. No one needs to know how simple they are to make.

Nicole Hood (Leesville, LA) was also inspired by a trip to Hawaii and posted her Tropical Waldorf Salad recipe.

“This is perfect for a summer picnic or serve it at a party in decorative spoons,” thinks Nicole.

This fruit salad whips together cream cheese and pineapple juice to create a sweet and tangy dressing.

I loved biting into the apple and macadamia nuts. Then in the next bite, there’s pineapple coated with cream cheese dressing and shredded coconut. It’s a fantastic combination of flavors.

“So, this is a twist I took from a deep-fried coconut breaded recipe,” reveals Ashley Muller (Chandler, AZ). “I wanted a healthier style of chicken, and this is what I came up with.”

Ashley’s Grilled Coconut Chicken is a fantastic way to up the flavor of chicken breasts.

Marinating in coconut milk makes the chicken moist and flavorful. Once grilled, the chicken is so tender you can cut it with a fork. Toasted coconut is sprinkled on top adding a little crunch to every bite. This chicken is sweet, salty, and savory.

If you like the famous candy bar, you need to make Beth Harris’ (Danville, OH) Mama’s Mounds Bar Pie. There are layers of happiness with each bite of this easy and delicious pie.

“This pie is so addictive,” says Beth. “A huge hit with my boys!”

The coconut in the creamy filling is sweet, and mini chocolate chips add a crunchy texture. As Beth mentions, the hardest part is waiting for the pie to cool for 24 hours in the fridge.
