Tropical Waldorf Salad
2• juicy red apples
1/2 cmacadamia nuts, chopped
2 Tbspdried cranberries
8 ozpineapple tidbits, drained (reserve 4 tbs juice)
·juice from 1 lemon
1/2 cshredded coconut
4 ozwhipped cream cheese
How to Make Tropical Waldorf Salad
- Chop 2 large unpeeled red apples in small cubes.
- Mix with lemon juice to keep from browning.
- In large bowl mix together apples, macadamia nuts, 4 oz whipped cream cheese, pineapple tidbits, pineapple juice, coconut, and cranberries.
- I like to present the Waldorf Salad in 20-25 decorative spoons but you can also use small bowls and serve 8-10 people as a side dish.
