Fresh Peach Recipes That Are Just Peachy

Juicy peaches are pure perfection in the summer. Near my house, there is a truck that has the best peaches. After biting into one, make sure to have napkins handy. I picked up a box this weekend and I can’t wait to use them in a few fresh peach recipes.

Fruit salsa is terrific on chicken, fish, or all alone on a tortilla chip. Pat DiMercurio’s (Saginaw, MI) Peach Salsa is a wonderful way to use ripe peaches.

“I needed to use up a couple of very ripe peaches today and this is what I came up with,” explains Pat. “I served it with seared chicken breasts.”

Pat’s salsa is sweet with a slight bite from green onions. Fresh bell peppers, and a lot of cilantro, make this salsa wonderful. The tang of lemon juice balances out the sweetness of the peaches. Simply delish!

Gretchen (Columbia, TN) has a unique and fresh twist on chicken salad with her Chicken Salad With Fresh Peaches.

“Instead of the usual grapes and celery, try some fresh peaches and cucumber in chicken salad,” suggests Gretchen.

I never thought to add fresh peaches to chicken salad and was in for a wonderful surprise. The sweet peaches, mixed with the cucumbers, give this salad a fresh feel.

Sprinkling the chicken salad with toasted almonds adds a fantastic nutty flavor. A refreshing summer salad to have a hot day.

Freda Gable’s Grilled Peaches would be great if you’re camping this weekend or just want to grill dessert.

“These are great individual dessert servings,” thinks Freda. “I have also mixed plums with peaches or fresh pineapple with the peaches for great flavor.”

This recipe shakes things up by adding gingersnap cookies, brown sugar, butter, and cinnamon to the peaches. It tastes almost like a grilled peach cobbler.

Serve alone or with a scoop of vanilla ice cream for a delicious and easy summertime dessert.

A flaky crust holds in the not overly sweet filling. The natural flavors of the fruit shine bright.

One of the easiest desserts is a fruit crisp, and I can’t find anything I don’t love about Judy Richardson Butz’s Fresh Peach Crisp.

“We went to an orchard in a town near us and we bought some very ripe peaches for cooking so this is what I came up with,” reveals Judy. “My new husband of 6 weeks loved it.”

The filling is jam-packed with sweet peaches. It’s gooey, almost pie-like. The buttery top is nice and crisp and holds in the delicious peach filling. This peach crisp is super simple and very yummy.
