Five Grilled Dishes For Tonight’s Dinner

Chicken Bacon Kabobs

Summertime means grill time! When the weather permits, I try to grill at least one night a week. While I love my kitchen, it’s nice to get outside and enjoy the weather while making a meal. Depending on what you feel like, here are some options to add to your dinner menu.

Kabobs are one of the easiest grilled dinners to make. Cheryl Redes’ (Warren, MI) Chicken Bacon Kabobs are delicious.

“This quick and easy tropical treat is sure to delight your family or guests at your next grilled lunch or dinner,” thinks Cheryl.

Thanks to the pineapple and sweet apricot glaze, these chicken kabobs have a tropical feel. The glaze really makes these kabobs. This recipe has a few unusual steps, like soaking the chicken in cranberry juice, but the end result is worth the effort.

The chicken kabobs are a nice combination of sweet and savory. When you get a bite of bacon it’s a surprise. All the flavors pair perfectly and would be great for any summer dinner.

“It’s fast, affordable, and goes great with a cold beer or white wine,” says Denny.

Tilapia is a mild fish so the Cajun seasoning and lemon pepper are perfect to jazz up the flavor. I love placing a slice of lemon on the tilapia while it grills. The fish just soaks up the lemony goodness.

Another fish option is Lauren Perkins-Boyd’s (Portland, OR) Grilled Fish Tacos With Chipotle Crema.

“In the words of my little brother these taco’s are the ‘freakin’ bomb’ and I would have to agree,” reveals Lauren.

When you’re craving fish tacos but don’t want to go out to eat, these are a tasty option. The marinade for the mahi mahi is seasoned perfectly. If you don’t have mahi mahi, any mild white flaky fish will work.

I love the fresh chipotle crema. It’s tangy and has a little kick that’s the perfect complement to the fish. Yum!

“You can make everything in advance so all you have to do is put the Grilled Chipotle Chicken Pizza Rolls together and grill when you’re ready to eat,” explains Lindsey McCue (Los Angeles, CA). “You can have fun with the ingredients and put whatever you’d like inside!”

Ok, these rolls are seriously delicious! A flavorful recipe the family can help prepare. The chicken marinade alone is tasty. You may find yourself snacking on the grilled chicken.

The combination of the raspberry chipotle sauce with the marinated chicken is a dream. I liked the tangy taste Cotija cheese gives these pizza rolls. Serve with a little extra sauce for dipping.

Fresh orange and ginger root make the marinade special for Iris McCall’s (Chicago, IL) Ginger-Citrus Chicken Thighs Off the Grill.

“I left the skin on because my kids love the crispy skin,” shares Iris. “A green salad and cheddar biscuits set it off. Good eating.”

You taste the sweetness from the orange, balanced with some spice from the ginger and salty from the soy sauce. So full of flavor! I marinated them overnight and they were so juicy when they came off the grill.
