Irish Cream Chocolate Cookies

The Irish are famous for a few things. Beautiful landscapes, thatch cottages, rocky seascapes, rain, even their cuisine in recent years. But what the Irish really know well are their spirits. With St. Patrick’s Day next week, I figured it would be fun to incorporate a few of my favorite Irish flavors into desserts.

“I love to visit Ireland and after searching found recipes that when put together create a taste of the Emerald Isle,” shares Melanie Miller. Her Guinness, Bailey’s and Jameson Whiskey Cupcakes really encompass the favorite drinks from Ireland.

What may at first seem to be an unlikely cupcake flavor turns out to be a real treat indeed! You can definitely taste all the different liquors in these sweet little cakes, so adjust the amounts to your liking. As a side note, we do not recommend driving if eating more than one of these!

With the alcohol not baking out, Heather M. Baker’s Bailey’s Irish Cream Fudge is definitely not for the wee leprechauns. But, the older leprechauns are sure to enjoy this recipe!
