Very smooth and silky fudge. I like to make this recipe and my other Baileys Irish Cream fudge and give as gifts because they are both wonderful flavors. All my friends love love love this fudge!

Irish coffee... only more wonderfully sinful! This fudge recipe is remarkably smooth and creamy with hints of coffee and Baileys Irish Cream. It's really rich. Perfect for any time of year - not just for St. Patrick's Day. We can't wait to make it again!

Ingredients

  • 3/4 cup margarine or butter
  • 3 cups sugar
  • 3/4 cup evaporated milk
  • 1/3 cup Baileys Irish cream
  • 1 tablespoon instant coffee crystals
  • 7 ounces jar marshmallow cream
  • 1 package vanilla morsels or butterscotch chips, 11 oz
  • 1 teaspoon vanilla extract

How To Make baileys irish coffee cream fudge

  • Coffee crystals dissolved in Baileys.
    Step 1
    In a small bowl, combine Baileys and coffee crystals. Microwave on high for 10 seconds or until melted and dissolved.
  • Butter, evaporated milk, sugar, and marshmallow cream melting in a saucepan.
    Step 2
    In a medium saucepan, over medium heat, melt butter, evaporated milk, sugar, and marshmallow cream.
  • Pouring Baileys coffee mixture into saucepan.
    Step 3
    Slowly add the Baileys coffee mixture; stir well.
  • Mixture boiling in the saucepan.
    Step 4
    Boil for 5 mins.
  • Stirring in butterscotch chips.
    Step 5
    Remove from heat. Stir in chips and vanilla extract. Stir for approx. 3-4 mins until smooth.
  • Fudge poured into a baking dish.
    Step 6
    Pour into a foil lined 8x8" pan. Chill to set.
