Crock Pot Mango Chicken

“I had discovered a cranberry-catalina chicken from someone who had spent time down under as a missionary. Turns out that was a riff off an apricot chicken, which someone from Australia I know posted online. This is just essentially a mango version of that apricot chicken. All of it is yummy. They do chicken very well down under. Serve this with plenty of sauce over rice or with mashed potatoes. I imagine you could add a bit more chicken and onion to this and still have plenty of sauce. So if you increase the chicken, you should be okay without more sauce.” – Sue

Crock Pot Southern BBQ Pulled Pork

“I make this about every couple of weeks. My kids love this, and so does my brother. My husband, who is not crazy about BBQ, even likes this dish… he can’t help it, he is from up north and his family doesn’t do BBQ. It has taken me a good 9 years to get him to eat a lot of our Southern cuisine, lol” – Karen

Slow Cooker BBQ Chicken Chopped Salad

“I never thought I could get my husband on board for eating a salad for dinner but the BBQ chicken really gives this some substance. The way this salad is served is perfect for the pickiest eater because it allows the diners to pick and choose which veggies they like. This dish has easily won a place on my table for the summer months. The veggies can be swapped out for whatever you like or whatever is fresh in your garden.” – Christine

Carnitas (Slow Cooker)

“I served this on Mother’s Day figuring it was MY day and I love this type of food; my husband usually doesn’t. Well, this made a believer out of him he loved it and has asked me to make it several times since. He is now convinced that tacos and burritos are not ALL made from ground beef with taco seasoning. FINALLY!” – Pam

BBQ Crock Pot Beans

“The perfect summer recipe for picnics, reunions or summer parties. I’m always asked for the recipe, men especially love these. I always double this recipe as it goes fast. These can be made in a Crock Pot slowly, or if time is a factor, on the stove, in about 1-1/2 hrs. Use a heavy dutch oven type pan. Note: do not eliminate the instant coffee or liquid smoke. They are essential to the rich taste of these beans.” – Gloria
