My family were soup eater's. . This was an easy satisfying bowl of comfort. Summer and winter! You can use your favorite veggies. You xan use the simple mix veggie bags or use zucchini. Cauliflower. Bell peppers. Cabbage. Its what ever you like. Amount of..Rule of thumb would be 2 bags of frozen you can stretch it out/ thin it out by adding a 1 or 2 more cups of water. Just add when adding the original amount of water...you may want to Especially if adding the rice or barely .. This is always better the next day after flavors marry. Freezes great.

Ingredients

  • 1 large can crushed or diced tomatoes
  • 1 chopped small onion
  • 4 cloves diced garlic
  • 1 bag frozrn mixed veggies
  • 1 bag sliced okra (optional)
  • 3 - beef or chicken boulion cubes
  • 6 cups water
  • 4 bay leaves
  • 1 teaspoon rosemary, dried
  • 1 teaspoon thyme, dried
  • 1/4 teaspoon red pepper flakes
  • salt to taste
  • 1/2 teaspoon black pepper
  • 1 cup cooked barley or rice (optional)
  • 1 cup cooked diced chicken or beef (optional )
  • 1 stalk celery with leaves chopped

How To Make easy veggie soup

  • Step 1
    Chop onion garlic celery. Place in stock pot with oil and lightly sweat them. Just to tenderize a little and Release the fragrances.
  • Step 2
    Add bay. Rosemary. Thyme . red pepper . If adding meat aff now and cook about 2 minutes.
  • Step 3
    Add tomatoes. Water. bouillon . frozen vegetables and okra
  • Step 4
    Bring to boil ..stir well.. lower heat to simmer and cover. Cook 20 minutes.
  • Step 5
    If adding barely add now let simmer 15 minutes or longer. Eat!!!
