Here I Am Starting A Gumbo And Have Added Mirepoix To My Stove Top Roux In My Favorite Roux Pan. I Cannot Tell You The Sense Of Accomplishment I Felt When I Could Produce A Roux As Dark As Paul Prudhomme's Without Burning It. For Good Gumbo It Is A Must.
