Grilled Dinner Options

In the summer, I like to fire up the grill when preparing dinner. Hamburgers and hot dogs are always popular with my family. But, I’ve got other grilled dinner options on my menu this week.

When on sale, I stock up on chicken breasts and freeze them for later. Kathy D.’s Super Easy Grilled Chicken Teriyaki is a good way to use them.

“This makes for a quick and flavorful meal,” thinks Kathy. “Just marinate the chicken earlier in the day (I have marinated it for only 1 hour and it was still very flavorful), and pop it on the grill for a quick dinner.”

Kathy shares a simple way to jazz up a plain old teriyaki sauce and the magic happens while the chicken marinates. Add steamed rice and veggie, and dinner is served.

Another way to use chicken breasts is for Robynne Glenn’s (Lake Arrowhead, CA) Grilled Chicken Breast Ciabatta With Pesto Mayo.

“I am always looking for new ways to prepare my family’s favorite foods and this sandwich really does it for us,” reveals Robynne. “I slipped in whole grain Ciabattas, grilled chicken breasts, Swiss cheese, bacon, tomatoes, avocados, and topped it off with bold pesto mayo.”

Robynne’s sandwich is a restaurant-quality grilled chicken sandwich you can make at home.

The chicken is pounded thin and is tender when grilled. It’s delicious on the toasted ciabatta bun with gooey melted Swiss cheese and fresh toppings.

On top is a basil pesto mayo that’s simple to prepare. When you take a bite, you’re hit with all the divine flavors and textures.

Delores Ward’s (Barboursville, WV) Grilled Flat Iron Steak will be a big hit with your family and your wallet.

“My family and friends love this and ask for it at dinner and cookouts,” explains Delores. “I always make extra and that is even gone by the end of the meal – you just keep wanting one more piece. If there are any leftovers, they are great in a salad or sandwich.”

To make flat iron steak tender, it needs a good marinade and this recipe offers just that.

Take some easily accessible prepared sauces, mix ’em together, and you’ve got a unique and delicious marinade. The final result is a mixture of smoky, rich, and savory flavors.

Sherri’s Grilled Shrimp And Sweet Potatoes are a wonderful summer dinner option.

Lime and garlic pair nicely with the spiced rum in the shrimp marinade. Once grilled, the shrimp have a robust flavor.

The grilled sweet potatoes are fantastic straight off the grill, but the maple lime sauce sends them over the top. It’s sweet with a little tang. Sprinkling pecans adds a little nuttiness and the goat cheese is a tangy contrast to the sweet maple. So good!

Grilled Pizza for dinner? Absolutely!

It’s fun, but it can be hard to find good directions. Karen White (Houston, TX) provided a great step-by-step guide on how to grill pizza right.

“I thought I would give this a try and it turned out really well and very good,” shares Karen. “Tastes just like it came off of a wood-burned stove.”

Karen recommended pepperoni, onions, green peppers, and Italian sausage. For testing, we went with that and the combination created a flavorful meat and veggie pizza.

Feel free to use what your family likes, though. Mushrooms, black olives, caramelized onions, meatballs… the options are endless.
