Recipes to Use Up Fresh Strawberries

Award-Winning Strawberry Rhubarb Pie

On my food shopping trips, I’ve noticed strawberries look quite tasty. They’re bright red, big, and look juicy. I finally decided to pick up a quart to give them a try. Snacking on fresh strawberries is delicious (especially with a little cream), but I plan on using them in a recipe too. And, while I adore strawberry shortcake, I thought I’d try other ways to use them.

For breakfast, Kyle Dalakas’ (Akron, OH) Strawberry Overnight Oats With Honey and Flaxseed is easy and healthy.

“This overnight oat recipe is a simple and super healthy breakfast idea with just 5 ingredients,” shares Kyle.

I love overnight oats and like the nutty flavor flaxseed gives the dish (they have a ton of health benefits too). Strawberries and honey sweeten up the oatmeal. Delicious and creamy, it’s a simple breakfast. You can make this using whole milk, but skim, soy, or almond milk – whatever you have handy and prefer. While this is perfectly good cold, pop it in the microwave and it would be yummy too.

Susan Cutler’s (Anchorage, AK) Chicken and Strawberry Salad is a delicious lunch or light dinner.

“You grill the chicken in this salad after it marinates,” explains Susan. “If you have other appliances used for grilling such as a George Foreman Grill or Jenn Aire use those if the weather doesn’t permit outside grilling.”

This light and fresh salad is delicious! With just the right mixture of strawberries, mandarin oranges, and spinach, it’s perfect if you’re looking for a light meal. The dressing is sweet with a slight tang from the lemon juice, but the salty chicken balances it out.

“This is a delightful summer drink,” says Mary Lee about her Strawberry Kiwi Schnapps Smoothie. When the weather is warmer this is perfect to sip on.

This adult smoothie’s light, refreshing, and full of strawberry flavor thanks to the fresh strawberries. What I love is this is a drink with alcohol, but the taste isn’t harsh. If you favor a fruity frozen beverage, try this cocktail this summer.

We all know strawberries are fantastic for desserts and here are a few to prepare.

Karen Axel-Knispel’s (Plainview, NY) White Chocolate Strawberry Cookies can be whipped up in a snap.

“These are so good,” thinks Karen. “A nice soft cookie.”

These strawberry cookies are delicate, soft, and sweet. With just a hint a lime in the undertones, they are kind of refreshing. The white chocolate chips and fresh strawberries are a lovely flavor combo.

If you like cream puffs, give Cyndi McGrath’s (Stephens City, VA) Strawberry Cream Puffs a try.

“As an apprentice chef, I prepared these for a local restaurant and ended up receiving requests for more,” reveals Cyndi. “They are easy to prepare, but if you need more than 8, you’ll need to double it.”

Light, cool, fresh, and creamy, these strawberry cream puffs are simply beautiful. The tartness of the strawberries with the sweet cream and the soft pastry puff is heavenly. I like that this recipe only makes eight cream puffs. It helps me restrain myself from eating too many.

Shannon Renee’s (Jessup, GA) Award-Winning Strawberry Rhubarb Pie is perfection.

“The best thing about this recipe is that it’s not very hard to make at all,” shares Shannon. “I ALWAYS use fresh ingredients. I only make this when rhubarb is in season.”

The filling is sweet, tart, and addictive to eat. When it’s cut, the rhubarb-strawberry filling holds up. It’s a beautiful slice of pie. I agree with Shannon, this rhubarb pie recipe is a winner.
