Cater to Mom With a Meaningful Breakfast This Mother’s Day

While they’re celebrated on a daily basis, next Sunday is when we officially honor all the amazing things moms (and grandmas!) do. Let them know how much you care by preparing a special breakfast this Mother’s Day. I’ve found a few recipes that are sure to impress the family.

Serve mom this breakfast cheesecake and she will definitely feel the love. The cheesecake is smooth, creamy and not overly sweet. Then you have a bit of savory from the pork roll. The waffle crust is genius and no one will ever guess what the crust is made of. The sweet crumb topping is perfect!

Teresa G.’s Asparagus Omelette is a great way to start Mother’s Day. “This is one of my favorite breakfast/brunch recipes because it is so flavorful and quick to make,” reveals Teresa.

This is a fancy (but easy!) omelet to serve for a special day. The asparagus adds a slight crunch and prosciutto adds so much flavor. Teresa’s recipe is enough for one omelet. So, if you want to join mom when eating, just double or triple the recipe as needed.

“I made this Red Velvet Waffles with Cream Cheese Glaze recipe for my momma on Mother’s Day last year,” explains Nicole Hood (Leesville, LA). “These chocolate waffles are rich and moist and the sweet cream cheese glaze and crunchy pecan topping make them a decadent and delicious meal that any mother would love!”

Who wouldn’t love to be served this darling and decadent breakfast?! We’re obsessed with the glaze, the vibrant color, the flavor and… well… everything about these waffles.

Tari Harlan’s (Poland, IN) Momma Mia’s Saturday Breakfast Casserole is a quick and easy breakfast casserole that will serve a family. “I used to make this on special occasions, you know like weekends,” jokes Tari. “My youngest daughter just as me for the recipe, so she could fix it for her family.”

Bell pepper, onions, and sausage add a lot of flavors to the dish. This casserole combines everything you love about breakfast. The cornbread is a great vessel for all the yumminess.

“These Fluffy Lemon-Blueberry Pancakes were always my daughter’s favorite pancakes when she was a little girl and she still loves them,” shares Sherry Monfils (Worcester, MA). “I miss making them for her.”

This recipe jazzes up a boxed mix to create pancakes everyone will remember. Hints of lemon and bursts of blueberries are in every bite. These light, fluffy pancakes are a refreshing way to start Mother’s Day.
