billie's potato-cabbage-ham soup
I first sampled this just after Christmas this year while visiting Mom and Pop. This is a totally delicious and comforting soup! My dad has just finished radiation and chemotherapy for cancer and he ate, and ate, and ate of this soup. It was good to see him have an interest in eating again. Please pinch this...for him. It is a fantastic and satisfying soup. Too easy to make but very satisfying.

Ingredients
- 4 tablespoons butter
- 3 tablespoons oil
- 3 medium potatoes, cubed (about 1 lb)
- 2 medium carrots, diced
- 1 bunch scallions, diced
- 3 tablespoons flour
- 4 cups shredded cabbage and diced
- 2 cups water
- 1 can 13 oz. chicken broth
- 1 tablespoon dill weed
- - pepper and salt to taste
- 1/4 pound lean ham, diced
How To Make billie's potato-cabbage-ham soup

Step 1Peel potatoes and carrots. Cut into 1/4" dice. Shop scallions and cut ham into 1/4" dice (set aside the ham).

Step 2Melt butter. Add all veggies EXCEPT cabbage. Saute 5 minutes.

Step 3Stir in flour and cook 1 minute...stir...stir....stir

Step 4Add cabbage, water, broth, dill and pepper. Bring to a boil. Reduce heat and simmer 20 minutes covered.

Step 5Just before serving, lightly mash those potatoes with a masher to just thicken a little. Now add the ham and give a few minutes to heat through.
