riced zucchini and/or yellow squash for scd
In the very early stages of the Specific Carbohydrate Diet, or during an IBD flare, peeled & deseeded cooked squashes may be one of the few vegetables that can easily be digested. (Cauliflower rice can be too rough on tummies sometimes.) This dish is very tasty and makes a nice accompaniment to many main dishes. We like to make a big batch & portion out for future meals. Since this is a bit labor-intensive when you need to peel & deseed, I sometimes freeze portions for the person needing it, and serve cauliflower rice to everyone else, since I can buy already riced cauliflower.

Ingredients
- about 3.5 pounds zucchini and/or yellow squash
- handful fresh garlic, pressed
- 1/2-3/4 teaspoon salt
- 3-6 tablespoons lime juice
How To Make riced zucchini and/or yellow squash for scd

Step 1If in early stage of SCD diet, peel & deseed the zucchini/squash first. You may skip this step if you do fine with the peel & seeds. I save the peelings & seeds in a freezer bag, for making vegetable stock or other dishes later, since some in the family do fine with the peel & seeds.

Step 2Grate the zucchini/squash & squeeze with hands to press out excess liquid. Discard liquid.

Step 3Drizzle light flavored olive oil/cooking oil in big pan, top with pressed garlic, then grated zucchini/squash. Heat, add lime juice & salt. Stir, and cook down any excess liquid.
