Step 1Remove the core of the tomatoes and discard them.

Step 3Emerge prepared tomatoes in boiling water and process for 40 seconds at the most.

Step 4Remove tomatoes and plunge them in an ice water bath. Leave them in for 3 to 5 minutes.

Step 5Using a paring knife, peel off their skins and discard them. At this point, they can be crushed if desired.

Step 6Cut the tomatoes in half and remove the seeds; discard them. Chop or dice depending on the recipe.
