I recently started making my own yogurt and I began looking for more ways to use the delicious bounty. I came up with this dressing and it proved to be delightfully delicious. It is much lower in calories than the dressings I was using before. The family is pleased with this dressing too. In the future this is going to be our "go to" dressing.

Ingredients

  • 2 cloves garlic, chopped
  • 2 tablespoons capers, drained
  • 4 - canned anchovies, drained
  • 2-3 tablespoons red wine vinegar
  • 1/2 cup mayonnaise
  • - fresh ground pepper, to taste
  • 2 cups greek yogurt
  • 1/4 cup extra virgin olive oil

How To Make yogurt salad dressing

  • Step 1
    Put the garlic, capers, anchovies, vinegar, mayonnaise, and yogurt into a food processor.
  • Step 2
    Turn on the food processor and while it is running slowly drizzle in the olive oil. Watch the texture, you may not need all of the olive oil.
  • Step 3
    When well blended, transfer the dressing to a container with a tight fitting lid and refrigerate until ready to use.
