Ingredients
- THE FISH
- 1/2 pound white fish, any variety you like
- 1 cup cornflake crumbs
- 1 teaspoon lemon pepper
- 1/2 teaspoon salt
- 1/8 teaspoon ground pepper
- 1/2 cup all purpose flour
- 2 egg whites
- 1/4 cup skim milk
- 8 flour tortillas (preferably high fiber or whole wheat)
- 1-2 cup shredded cabbage or cole slaw mix
- 1/2 cup sliced green onion
- fresh, chopped cilantro
- diced tomato
- plain, nonfat greek yogurt or sour cream
- fresh salsa
How To Make healthy and delicious fish tacos

Step 1Preheat oven to 450 degrees. Place a baking rack over a foil lined baking sheet and spray with a non-stick cooking spray.

Step 2Cut fish into bite sized pieces.

Step 3Add flower to a shallow dish.

Step 4In a second shallow dish, combine cornflake crumbs, lemon pepper, 1/2 tsp. salt, 1/8 tsp. black pepper.

Step 5Beat egg whites and milk in a third shallow bowl.

Step 6Coat pieces of fish on all sides in flour, shaking off any excess.

Step 7Dip in coated fish pieces into egg mixture then roll into crumbs, coating well.

Step 8Place coated fish on prepared baking rack. Bake in a preheated 450º oven for 8 minutes or until fish is crisp and cooked through.

Step 9In the mean time, Spray a nonstick skillet with cooking spray and lightly cook tortillas until slightly browned. Keep warm.

Step 10To make tacos, add fish to tortillas and top with favorite toppings such as the one's suggested in the ingredients list.
