awesome home made veggie burgers!!!

Cardiologists all over the world tell us the more we eat a plant based diet, the better it is for our hearts and our arteries, but veggie burgers from the store have so much garbage in them. Between the cellulose (wood pulp filler,) the chemical additives, unhealthy oils, texturized vegetable protien, and added flavors and colors, they don't seem healthy at all. So I decided to make my own. I think I nailed it on my very first try! These came out absolutely delicious. The texture is perfect, the flavor is amazing. It made exactly 8 patties (that was literally just dumb luck) I love these!

Ingredients For awesome home made veggie burgers!!!

  • 2
    crowns of fresh broccoli
  • 1
    green pepper
  • 1 lg
    carrot
  • 4 clove
    garlic
  • 2 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    onion powder
  • 1 1/2 tsp
    smoked paprika
  • 1 1/2 tsp
    turmeric
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    kosher salt
  • 1 can
    black beans, drained and rinsed
  • 1/2 c
    walnut pieces
  • 2 c
    packed baby spinach leaves
  • 1/2 c
    packed fresh parsley sprigs
  • 1/2 c
    packed fresh cilantro sprigs
  • 4
    green onions, sliced
  • 2/3 c
    dry bread crumbs
  • 1/4 c
    tomato paste
  • 2/3 c
    cooked and cooled rice (brown, white, wild, whatever type you prefer)
  • 8
    whole wheat hamburger buns, toasted
  • burger toppings you enjoy (cheese, lettuce, tomato, onion, etc)

How To Make awesome home made veggie burgers!!!

    Preheat oven to 400 degrees.

    line 2 baking sheets with parchment paper.

    Dice broccoli, carrot and green pepper and garlic into chunks and throw into bowl of food processor.

    Next add extra virgin olive oil, onion powder, smoked paprika, turmeric, salt and pepperto the vegetables and pulse until very coarsly ground, but not pasty.

    Spread vegetable mixture into a thin and even layer on one of the parchment lined pans. Set aside.

    Next get the black beans dry by gently rubbing them between to paper towels. When you are satisfied that they are dry enough, put the beans in and even layer on the other parchment lined pan.

    Bake the beans and the veggies side by side in the oven for 20-30 minutes. Cool completely!

    Place the walnuts, spinach, cilantro, parsley and green onion into the bowl of the food processor. Pulse until coarsley ground, not pasty.

    Add the black beans and pulse until ground and well incorporated. This should be a finely ground mix and not a paste.

    Pour contents of the food processor into a large mixing bowl. Add the roasted veggies, tomato paste, bread crumbs, and chilled rice.

    Mix all ingredients using your clean hands. Taste and add more seasoning if needed.

    Shape into 8 patties. The mix should make exactly 8 burgers.

    Baking Directions: Coat a foil lined jelly roll pan with 3-4 Tbsp. olive oil and bake in a 375 degree, preheated oven for 13-15 minutes. Turn and bake for another 13-15 minutes or until crisp and browned on both sides.

    Serve on toasted buns with your favorite burger toppings!

    TIP: You can freeze these. Cook as normal, place any extras on a freezer paper lined tray. Freeze solid. Remove to an air tight freezer bags and use up to 3 months.

    To heat from freezing. Preheat oven to 375. Spray a baking sheet with nonstick cooking spray and bake for 30 minutes, flipping halfway through.
