Ingredients

  • 1 12-inch foolproof cauliflower pizza dough, baked
  • 1/4 cup greek pesto sauce
  • 1 large chicken breast (about 1 cup), poached and cubed
  • 1 can (6 oz.) artichoke hearts, rinsed, drained and cubed
  • 2 tablespoons sun-dried tomatoes, well drained
  • 2 tablespoons shallots, thinly sliced (lyonnaise cut)
  • 1/8 teaspoon red pepper flakes, or to taste
  • 2 cups sharp white cheddar cheese, grated
  • 1/2 tablespoon chopped parsley, for garnish

How To Make mediterranean artichoke chicken pizza

  • Step 1
    Preheat oven to 425ºF.
  • Step 2
    Spread pesto, leaving about ¼-inch from the edge of the pizza crust. Evenly add chicken cubes, artichoke hearts, sun-dried tomatoes, shallots, red pepper flakes, and cheese.
  • Step 3
    Transfer to the preheated oven and bake for 10 to 12 minutes or until the cheese is melted.
  • Step 4
    Remove from the heat and let it rest for 5 minutes before adding chopped parsley.
