Intro Diet Cheesecake “pudding”
Unlike most cheesecakes, we like this warmed with a bit of cinnamon on top & some various flavors of gelatin gummies to go with it. (See my recipes for the ones we used, or for instructions for the dripped SCD yogurt.) If you can do a fruit sauce, that would be delicious as well.
2 1/2 cdripped scd yogurt, made with half & half
1 tspalmond extract
1 tspfrontier coop lemon flavoring
·sprinkle of cinnamon
·spiced-apple & pomegranate-orange homemade gelatin “gummies”
How to Make Intro Diet Cheesecake “pudding”
- Mix the ingredients together with a hand-held mixer until smooth.
Do not use a Vitamix blender, as that will make it froth up too much.
- Pour into greased 8”x 8” square baking dish, or other similarly sized baking dish.
- Bake at 350° until top is nicely browned & 2 1/2” from the edges no longer jiggle when the pan is moved. Start checking at 30 minutes, but it may need significantly longer.
Once out of the oven, let it cool before placing in the fridge. Do not cut until fully cooled in the fridge.
To serve, unlike normal cheesecake, we found we like this best warmed up, with a sprinkle of cinnamon on top, and strangely enough, the spiced-apple and pomegranate-orange gummies are a wonderful compliment to it. Makes a very tasty & unique dessert. And one that can be made enjoyed on the intro diet of the Specific Carbohydrate Diet. This saved my kid’s birthday, when they were in the midst of an IBD flare. They thoroughly enjoyed this dessert, with cute shaped gummies to top it, as their birthday cake.
