yummy 64 calorie truffles (only 3 ingredients!)

Although I make plenty of high calorie treats for friends and family, my own diet is pretty healthy. After losing weight four years ago, I found the one thing that I could not give up was something sweet after meals. These delicious truffles make me feel like I'm cheating, when they are actually only 64 calories each! Perfect for packing in lunches to avoid the vending machine or slip into your purse for a mid-day pick-me-up. Enjoy! Recipe makes 20 truffles and is easily doubled.

Ingredients

  • 1/2 - cup crunchy peanut butter
  • 1/4 - cup finely chopped pretzels (i use my mini food processor)
  • 1/2 - cup semi-sweet chocolate chips
  • 1/4 - cup chopped peanuts or pretzels to decorate, optional

How To Make yummy 64 calorie truffles (only 3 ingredients!)

  • Step 1
    Combine peanut butter and pretzels in small bowl. Chill in freezer for 15 minutes.
  • Step 2
    Line baking sheet with waxed paper. Roll peanut butter mixture into 20 balls, approximately 1 tsp. each.
  • Step 3
    Place chocolate chips in microwavable bowl. Microwave for 1 minute. Stir. Continue to microwave at 20 second intervals until melted when stirred.
  • Step 4
    Dip balls in chocolate and return to lined baking sheet. Sprinkle with chopped peanuts or pretzels, if desired. Refrigerate until firm.
