Ingredients

  • CAKE
  • 1/4 cup vegetable oil or softened butter
  • 1/4 cup banana
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 2/3 cup plain yogurt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour (i use spelt flour)
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • GLAZE
  • 6 ounces unsweetened pineapple juice
  • 1 teaspoon cornstarch
  • 1 teaspoon cornstarch
  • 1/2 teaspoon cinnamon

How To Make sweet & sugar free- lemon cake w/ pineapple glaze

  • Step 1
    Preheat oven to 350 degrees. Beat together the eggs, butter, mashed banana until creamy. add yogurt, vanilla, and milk beat well. Mix in remained ingredients beating until smooth. Put into a oiled and floured 9 inch pan. Bake 350 for 25 minutes until done, cool on a wire rack.
  • Step 2
    for topping Put all in a sauce pan over medium heat whisking until it thickens slightly and remove from heat. To serve spoon glaze over warm cake. Serves 6.
