- 1/4 cup vegetable oil or softened butter
- 1/4 cup banana
- 2 large eggs
- 2 tablespoons lemon juice
- 2/3 cup plain yogurt
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 3/4 cups flour (i use spelt flour)
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- GLAZE
- 6 ounces unsweetened pineapple juice
- 1 teaspoon cornstarch
- 1 teaspoon cornstarch
- 1/2 teaspoon cinnamon

Step 1Preheat oven to 350 degrees. Beat together the eggs, butter, mashed banana until creamy. add yogurt, vanilla, and milk beat well. Mix in remained ingredients beating until smooth. Put into a oiled and floured 9 inch pan. Bake 350 for 25 minutes until done, cool on a wire rack.

Step 2for topping Put all in a sauce pan over medium heat whisking until it thickens slightly and remove from heat. To serve spoon glaze over warm cake. Serves 6.
