outstanding pineapple orange bread w/citrus glaze
AKA "Tropical Paradise Breakfast Bread" to my Grandparent To Grandparent friends! lol What a great quick bread! This just could be my all-time favorite sweet bread, and I make a lot of them! With each bite, you get subtle hints of pineapple, then orange, then almond and then banana. I especially love the addition of almond extract and the fresh orange peel glaze adds just the perfect touch of freshness to the doughnut/cruller like top. What a great addition to your morning coffee or tea. Beautifully moist and flavorful, it was rated a "3 thumbs up winner" in our home! My Photos

Yield: One 4 1/2 x 8 1/2 Inch Loaf
Ingredients
- BREAD:
- 1/2 - cup butter
- 1 - cup sugar
- 2 - eggs
- 1/2 - tsp. almond extract
- 1/2 - tsp. vanilla extract
- 1/2 - cup crushed pineapple (i used pineapple chunks that i pulsed in my mini food processor, well drained, because i wanted the pineapple to have a little texture.) reserve juice for glaze.
- 1 - mashed banana
- 1 - tsp. baking powder
- 1/2 - tsp. salt
- 1/2 - tsp. baking soda
- 4 - tsp. freshly grated orange zest (orange only, no white pith.)
- 2 - cups flour
- GLAZE:
- 1 - cup powdered sugar
- 1 1/2-2 - tb. pineapple juice
- 1 - tsp. freshly grated orange peel
How To Make outstanding pineapple orange bread w/citrus glaze

Step 1Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy. Beat in eggs until well blended and light. Add almond extract and vanilla. On low, stir in pineapple, banana and orange peel. Slowly add in flour, baking powder, soda and salt and mix until just blended.

Step 2Grease or spray a 4 1/2 x 8 1/2 inch pan. Line bottom only with parchment, if desired. Pour batter into pan.

Step 3Bake for 60-70 minutes or until a knife inserted in center JUST comes out clean. Don't over bake. (Mine took 60 minutes, but my oven bakes hot.) Tent loosely with foil for the last 10-15 minutes if browning too quickly.

Step 4Cool in pan on wire rack for 10 minutes before removing from pan. Glaze with orange peel glaze. (Directions below.) Enjoy!

Step 5To Make Glaze: Combine all glaze ingredients and spoon over warm bread.
