sweet hazelnut baked brie

I usually serve a Brie topped with an apricot, rosemary, balsamic vinegar, and pecan topping. This year I had a diabetic friend at the gathering, so I came up with this, and served it along with the other. As much as people love the other one, people raved over this & it went first. The coconut oil and almond extract give the impression of sweet, without actually containing any sugar. People kept asking if it had honey in it. My new favorite...what an indulgent tasting treat!

Ingredients

  • 1 - brie round
  • ~1/3 cup chopped hazelnuts
  • 2-3 tablespoons coconut oil (one with good coconut flavor, not refined. dr. bronner's brand is great)
  • 1 teaspoon almond extract

How To Make sweet hazelnut baked brie

  • Step 1
    Cut top off of Brie round & discard (getting rid of the white rind on the top.)
  • Step 2
    Melt coconut oil in a bowl.
  • Step 3
    Stir in hazelnuts and almond extract. Pour over the top of the Brie round.
  • Step 4
    Warm the Brie round in the oven or microwave, until gooey. If using the microwave, heat it 30 seconds at a time, about 2-3 times, until melty. Serve with Wheat Thins or other crackers. Note: crackers are not diabetic friendly. May serve to be eaten with a dessert fork, or use fresh vegetables to dip.
