I Made Gravy With The Drippings, And Then Some Garlic Mashed Califlower And Potatoes! Super Yumm!! Although, I Cooked Mine In A Cast Iron Deep Skillet, So It Was A Bit More Cooked On The Bottom, And A Little Too Rare Towards The Top. Also, My Roast Was Only 3.25lbs, So I Only Cooked It For 17 Minutes Before Turning Off The Oven. I Think I Should Have Used A Different Pan, And Cooked It Just A Couple Minutes Longer. But With All That Said, It Was Still Really Yummy!! =d

Also, my roast was only 3.25lbs, so I only cooked it for 17 minutes before turning off the oven. I think I should have used a different pan, and cooked it just a couple minutes longer. But with all that said, it was still really yummy!! =D

Could you get the meat done just a bit more by cooking it perhaps a few more minutes per pound and following the recipe otherwise .
