I made gravy with the drippings, and then some garlic mashed califlower and potatoes! SUPER YUMM!! Although, I cooked mine in a cast iron deep skillet, so it was a bit more cooked on the bottom, and a little too rare towards the top. Also, my roast was only 3.25lbs, so I only cooked it for 17 minutes before turning off the oven. I think I should have used a different pan, and cooked it just a couple minutes longer. But with all that said, it was still really yummy!! =D
