Summer Strawberry Recipes To Make This Week

While shopping at my local farmer’s market this past weekend, I found the juiciest strawberries. They’re one of my favorite summer berries and it makes me smile when I see they’re back in season. When I got home, I immediately started thinking of summer strawberry recipes I could make this week.

Lauren Conforti’s (Harriman, TN) easy-to-follow Strawberry Chocolate Chip Pancakes are perfect.

“These pancakes were so yummy,” shares Lauren. It is like a warm chocolate-covered strawberry rolled into a pancake.

This recipe starts with a basic boxed mix, so they are easy to whip up but they seem very fancy.

In every bite, you get bits of strawberries and warm chocolate chips. Top with whipped cream and a few extra strawberry slices.

Slightly healthier, but still as decadent, is Kyle Dalkas’ (Akron, OH) Strawberry Overnight Oats With Honey and Flaxseed.

“This overnight oat recipe is a simple and super healthy breakfast idea with just 5 ingredients,” says Kyle.

I’ve tried overnight oats, but never with flaxseed. Flaxseed has a nutty flavor and, besides its health benefits, adds a nuttiness to the oatmeal.

Fresh strawberries and honey sweeten things up. Delicious and creamy, it’s a simple breakfast that can be served cold or warm.

Mary Lee’s Strawberry Kiwi Schnapps Smoothie is an adult drink and perfect for poolside sipping.

“This is a delightful summer drink,” thinks Mary Lee. “You can triple or quadruple recipe and serve from punch bowl resting in a large bowl of ice cubes.”

What I love is that while there is alcohol, the taste isn’t harsh. It’s light, refreshing, and full of strawberry flavor thanks to the fresh strawberries. A wonderful fruity frozen beverage.

Cassie Thornburg (Brea, CA) also went to the market and found fresh strawberries. She wasn’t going to be able to eat all of them and that’s how she came up with her Roasted Raspberry Tart.

“I didn’t want all the fat and calories of the deeeeeelicious cream that goes under the fruit in a fresh fruit tart,” explains Cassie. “So my brain went to the easy fruit tarts I like to make.”

The strawberries really shine in this scrumptious tart. I loved how she mixed balsamic in with the strawberries. It adds just the right amount of tartness.

Everything is sprinkled with a touch of sugar before baking. This means after it bakes, there’s an extra pop of sweetness in every bite. Don’t forget the homemade whipped cream when serving.

We can’t talk strawberries without talking about strawberry shortcake. It’s a quintessential dessert.

Sherry Wilkins (Cabot, AR) shared her My Favorite Strawberry Shortcake that tastes like summer.

“Berries just came back into season here a few days ago,” reveals Sherry. “Seems like local berries always taste sweeter than the ones that are shipped in from out of state.”

The base for this dessert is a homemade shortcake that’s lightly sweet and flaky. On top, the strawberries are coated in a strawberry glaze, and then add a dollop of whipped cream. Yum!
