Lemon Desserts for Spring

I adore the tart flavor of lemon in sweet desserts. Really, lemon desserts are delicious all year long. But come spring, I crave them. Maybe it’s something about the longer and warmer days. If it’s one of your favorite flavors too, brighten up sweet treats with these lemon desserts for spring.

When a lemon craving hits, whip up a batch of Becky Hudgins’ (Joshua, TX) Lemon White Chocolate Chip Cookies. They can be made in no time.

“Lemon cookies are so yummy and refreshing to the palate,” thinks Becky.

If you love lemon, then you’ll adore the refreshing taste of these cookies. The base is a chocolate chip cookie recipe, but white chocolate chips are substituted. Candied lemon peel is the secret ingredient that amps the lemon flavor.

Lemon curd is something I have handy in my fridge. Nickole Smith-Palacios (New York, NY) shared her Easy Peasy Lemon Curd which is a delicious one that’s super creamy.

“This may just be my favorite thing to make (and eat, lol) but it’s not so friendly to the waistline,” jokes Nickole. “It’s absolutely delish on scones and muffins.”

Nickole is right, there are many uses for lemon curd. It can be spooned over pound cake or used as a filling for a simple boxed cake. Have frozen phyllo dough tarts? Bake them, add some lemon curd, and you have an easy dessert.

Trish Morris’ Lemon Ginger Crunch Parfait’s are perfect if you’re having friends over for dinner. Every person gets their own parfait and I guarantee their dish will be clean.

“This lemon filling is so good you’ll never buy store-bought filling again,” shares Trish. “You can alter this recipe by using vanilla wafers if you don’t like ginger.”

I opted to use candied ginger in the crust and loved the added punch of flavor. But, if you just use ground ginger and ginger snaps you’ll still have a delicious crust.

The lemon filling is creamy, sweet, tart, and delicious! Dolloped on these tarts is a sweet and tangy cream cheese topping that is perfect on top.

“This is the creamiest, most delicious lemon cheesecake,” promises Teresa G. “Everyone who has tasted it has loved it.”

Teresa’s Creamy Lemon Cheesecake takes a little time to prepare due to the chill time, but it’s worth it. I love the intense lemon flavor in her cheesecake.

Before this recipe, I had never used cream in a cheesecake, but I may from now on! I think it added extra creaminess to the cheesecake. The lemon curd on top adds that extra pop of flavor.

When sliced, Maggie May Schill’s (Jacksonville, FL) Southern Lemon White Cake With Lemon Curd is beautiful.

Maggie came up with this recipe when lemons were on sale and she was playing around with her Southern-style white cake. And boy, did she succeed. This lemon white cake is phenomenal.

Dense and moist, the cake’s not overly sweet. Her tart lemon curd helps to balance out the sweetness of the buttercream frosting. It’s fantastic.
