Cheesy Chicken Roll-Ups

One of my favorite things to make during the week is chicken. I always have some handy in the freezer so I don’t have to run to the store when I’m trying to put a meal together. I love cooking with chicken because it is versatile. If you’re wondering what to make for dinner tonight and also have chicken handy, give one of these Blue Ribbon recipes a try. They’re full of flavor and an easy weeknight dinner option.

“My significant other is doing low carb and even those not doing it know that pasta is a big no-no,” reveals Rose Daly (Madison, TN). “But sometimes even ‘low carbers’ crave a casserole that’s full of cheesy goodness. So, I decided to try to come up with a recipe that was low in carbs and still fit the bill for cheesiness.”

Honorary Kitchen Crew member Robin Lieneke (Chamois, MO) tested Rose’s Low Carb Chicken Casserole and gave it two thumbs up.

“With lots of cheesy goodness, this chicken casserole is very tasty,” shared Robin. “The luscious cheese sauce is what makes it so satisfying. While baking, it makes the house smell delicious.” Serve with a side salad and low carb vegetables for a dinner everyone will love.

“We eat a lot of chicken and I wanted something different so I came up with this sauce to put on my spicy chicken and it took the taste of the chicken to a whole new level,” explains Nelda Carnley (Jack, AL).

Nelda’s Spicy Chicken with Avocado Sauce is soooo good. The sauce is creamy, tangy and has a kick of spice. Chipotle peppers are added to give it that bit of heat. If you don’t like things spicy, just cut back on the pepper. Besides on chicken, the avocado sauce would be good to dip into tortilla chips or on a cheesy chicken quesadilla.

The evaporated milk and Dijon mustard combination add flavor and work together to seal in moisture. Parmesan cheese and bread crumbs make a nice crunchy coating for the chicken.
