vegetarian vegetable soup

I am a vegetarian wantabe I try not to eat meat but sometimes I just can't help myself :-)This is a delicious Soup even my picky husband likes.

yield a lot or you can just freeze some.

Ingredients

  • 2 cans no salt added whole kernal corn
  • 2 cans no salt added cream of corn
  • 2 cans diced no salt added tomatoes
  • 2 cans no salt added string beans
  • 2 cans 2 cans stewed tomatoes
  • 2 cans 2 cans sliced carrots
  • 2 cans no salt added spinach
  • 2 cans slices carrots
  • 1 package frozen butter beans
  • 1 package frozen dixie lee or field peas
  • 2 cans okra
  • 2 cans garden peas
  • 1 - sweet onion
  • 2 - garlic cloves
  • 2 tablespoons olive oil, light
  • 1 pound irish potatoes diced

How To Make vegetarian vegetable soup

  • Step 1
    use at least half,more if you can of no salt added veggies. you can use fresh or frozen veggies but it will add to the prep & cooking time.
  • Step 2
    open cans & put veggies in a large roaster pan,take your hand & kinda smoosh the stewed tomatoes & ocra, peel & dice onion & garlic& stir it all together, rinse cans & add a little water if needed,cook in oven on 375 until hot & flavors are blended, add olive oil after you turn oven off.
