I remember mama making this vegetable soup each summer harvest of squash & tomatoes and canning it for serving a healthy side dish throughout the winters cold months. Oh how we enjoyed it on cold days after school. So good along with peanut butter crackers. I hope your family will enjoy it as much as we did.

Ingredients

  • 2 medium yellow squash, fresh
  • 1/2 can tomato sauce
  • 1 - potato
  • 2 - garlic segments
  • 1/2 can red beans
  • 1/2 - onion
  • Dashes - onion flakes, dehydrated
  • Dashes - minced garlic seasoning
  • Dashes - paprika
  • 1 - zucchini
  • 1 sprig broccoli, fresh
  • 1/2 cup fresh corn
  • 1 - 1/8 portion of fresh cabbage
  • Dashes - blk pepper
  • 1 can stewed tomatoes

How To Make mama's vegetable soup

  • Step 1
    Wash, cut & slice vegetables. Dice onions, garlic.
  • Step 2
    Fill stainless steel pot 3/4 full with water to cover veggies. Add seasonings and Slow cook on low heat for 1/2 hr. Add tomatoes & tomato sauce during final 30 minutes.
  • Step 3
    simmer until ready to serve with toast, crackers or your favorite bread. note: I always use black pepper, paprika, garlic, ginger, cayenne, oregano, in most of my recipes for their nutritional value as well as flavor. Very rarely do I add salt and try not to use sugar.
