I remember mama making this vegetable soup each summer harvest of squash & tomatoes and canning it for serving a healthy side dish throughout the winters cold months. Oh how we enjoyed it on cold days after school. So good along with peanut butter crackers. I hope your family will enjoy it as much as we did.

How to Make Mama's Vegetable Soup

Step-by-Step

  1. Wash, cut & slice vegetables. Dice onions, garlic.
  2. Fill stainless steel pot 3/4 full with water to cover veggies. Add seasonings and Slow cook on low heat for 1/2 hr. Add tomatoes & tomato sauce during final 30 minutes.
  3. simmer until ready to serve with toast, crackers or your favorite bread.

note: I always use black pepper, paprika, garlic, ginger, cayenne, oregano, in most of my recipes for their nutritional value as well as flavor. Very rarely do I add salt and try not to use sugar.
