moms potato soup
This was one of Moms go to soups she made it quite often. I tweeked it a little and added a rue because I like a thick soup, Mom doesn't like a thick soup so if you don't like thick soup you can leave out the rue.Hope you enjoy.

Ingredients
- 2 large ham hocks
- 1 large onion (diced)
- 1 stalk celery (diced)
- 6 large potatoes (diced)
- 2 small carrots (diced)
- 1 stick butter
- 2 tablespoons flour (heaping)
- 4 cups milk
- 1 - recipe ( kenufflies)
How To Make moms potato soup

Step 1In large soup kettle put ham hocks cover completely with water.

Step 2Add onions, celery, potatoes, and carrots.

Step 3Cook on low on stove top till veggies are tender.

Step 4remove ham hocks set aside till cool enough to handle, remove ham from bone.

Step 5Remove veggies from heat and drain half of water off veggies . Set aside.

Step 6In sauté pan melt butter, add flour and mix continue cooking for about 2 minutes. Add milk a little at a time till mixture thickens.Remove from heat.

Step 7Return veggies and water back to stove top add ham from hocks.Add milk mixture and cook on low, till hot.

Step 8In sauce pan make Kenufflies according to recipe just before serving add to soup.
