Low-Cal Lemony Chicken Spinach Soup
If you're counting calories, count on this yummy soup to fill you up!
Note: Prep time includes cooking chicken.
5 cchicken broth, low-fat
1/2 smallred onion, finely diced
2garlic cloves, finely minced (i used a garlic press)
1/2 tspthyme, dried
1/2 tspmrs. dash garlic and herb seasoning
2 1/2 ccooked & shredded chicken*
4 cbaby spinach leaves
2lemons, cut into wedges
How to Make Low-Cal Lemony Chicken Spinach Soup
- Add broth, water, onion, garlic, thyme, Mrs. Dash, and chicken to stockpot.
Cook at a gentle boil for 8-10 minutes.
Turn off heat, and remove from heat.
Stir in spinach.
Serve each bowl with a wedge or two of lemon, and squeeze into soup and stir.
* I poached two organic chicken breasts for this.
