Ingredients
- 5 cups chicken broth, low-fat
- 3 cups water
- 1/2 small red onion, finely diced
- 2 - garlic cloves, finely minced (i used a garlic press)
- 1/2 teaspoon thyme, dried
- 1/2 teaspoon mrs. dash garlic and herb seasoning
- 2 1/2 cups cooked & shredded chicken*
- 4 cups baby spinach leaves
- 2 - lemons, cut into wedges
How To Make low-cal lemony chicken spinach soup

Step 1Add broth, water, onion, garlic, thyme, Mrs. Dash, and chicken to stockpot. Cook at a gentle boil for 8-10 minutes. Turn off heat, and remove from heat. Stir in spinach. Serve each bowl with a wedge or two of lemon, and squeeze into soup and stir. Enjoy! * I poached two organic chicken breasts for this.
