This low carb and low fat soup is easy to make and good for you. If you're counting calories, count on this yummy soup to fill you up! Note: Prep time includes cooking chicken.

Ingredients

  • 5 cups chicken broth, low-fat
  • 3 cups water
  • 1/2 small red onion, finely diced
  • 2 - garlic cloves, finely minced (i used a garlic press)
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon mrs. dash garlic and herb seasoning
  • 2 1/2 cups cooked & shredded chicken*
  • 4 cups baby spinach leaves
  • 2 - lemons, cut into wedges

How To Make low-cal lemony chicken spinach soup

  • Step 1
    Add broth, water, onion, garlic, thyme, Mrs. Dash, and chicken to stockpot. Cook at a gentle boil for 8-10 minutes. Turn off heat, and remove from heat. Stir in spinach. Serve each bowl with a wedge or two of lemon, and squeeze into soup and stir. Enjoy! * I poached two organic chicken breasts for this.
