I was on a mission to make a beef soup today, OMG it turned out so good! I dont usually use a recipe but I decided to write this one down because I want to make it again and again! It was sooooo delicious!

Ingredients

  • 2-3 pounds beef tip roast or equivalent
  • 1 cup celery-chopped
  • 6 large carrots, chopped
  • 4 medium potatoes, peeled and chopped
  • 1 - sweet potato, peeled and chopped
  • 1 large onion, peeled and chopped
  • 16 ounces mushrooms, cut in half
  • 1 large green pepper chopped
  • 5 small red or yellow sweet peppers
  • 1 quart canned tomatoes
  • 3 - bay leaves
  • 1 tablespoon marjoram
  • 1 tablespoon basil, dried
  • 1 tablespoon red pepper flakes
  • 4 tablespoons beef bouillon
  • - salt and pepper
  • 1 quart water
  • 3-5 tablespoons thai chili sauce

How To Make beef vegetable soup

  • Ingredients to be chopped
    Step 1
    Chop all ingredients that need to be chopped.
  • Suggested spices
    Step 2
    Spices all lined up and ready to add...or course you can add others to your taste!
  • soup ready to cook
    Step 3
    Layer in a crock pot. End with the meat and the spices on top.
  • Cook on low
    Step 4
    Cook on low 5 hours.
  • Stir the soup
    Step 5
    Give the soup a good stir before serving. You want to mix all that deliciousness together!
  • Ready to eat soup
    Step 6
    Serve with some chopped cilantro, a dollop of Ricotta Cheese and some good quality olive oil. YUM!
