Beef Vegetable Soup



I was on a mission to make a beef soup today, OMG it turned out so good! I dont usually use a recipe but I decided to write this one down because I want to make it again and again! It was sooooo delicious!

Slow Cooker Crock Pot


  • 2-3 lb
    beef tip roast or equivalent
  • 1 c
  • 6 large
    carrots, chopped
  • 4 medium
    potatoes, peeled and chopped
  • 1
    sweet potato, peeled and chopped
  • 1 large
    onion, peeled and chopped
  • 16 oz
    mushrooms, cut in half
  • 1 large
    green pepper chopped
  • 5 small
    red or yellow sweet peppers
  • 1 qt
    canned tomatoes
  • 3
    bay leaves
  • 1 Tbsp
  • 1 Tbsp
    basil, dried
  • 1 Tbsp
    red pepper flakes
  • 4 Tbsp
    beef bouillon
  • ·
    salt and pepper
  • 1 qt
  • 3-5 Tbsp
    thai chili sauce

How to Make Beef Vegetable Soup


  1. Chop all ingredients that need to be chopped.
  2. Spices all lined up and ready to add...or course you can add others to your taste!
  3. Layer in a crock pot. End with the meat and the spices on top.
  4. Cook on low 5 hours.
  5. Give the soup a good stir before serving. You want to mix all that deliciousness together!
  6. Serve with some chopped cilantro, a dollop of Ricotta Cheese and some good quality olive oil. YUM!
