I was on a mission to make a beef soup today, OMG it turned out so good! I dont usually use a recipe but I decided to write this one down because I want to make it again and again! It was sooooo delicious!

Ingredients
- 2-3 pounds beef tip roast or equivalent
- 1 cup celery-chopped
- 6 large carrots, chopped
- 4 medium potatoes, peeled and chopped
- 1 - sweet potato, peeled and chopped
- 1 large onion, peeled and chopped
- 16 ounces mushrooms, cut in half
- 1 large green pepper chopped
- 5 small red or yellow sweet peppers
- 1 quart canned tomatoes
- 3 - bay leaves
- 1 tablespoon marjoram
- 1 tablespoon basil, dried
- 1 tablespoon red pepper flakes
- 4 tablespoons beef bouillon
- - salt and pepper
- 1 quart water
- 3-5 tablespoons thai chili sauce
How To Make beef vegetable soup

Step 1Chop all ingredients that need to be chopped.

Step 2Spices all lined up and ready to add...or course you can add others to your taste!

Step 3Layer in a crock pot. End with the meat and the spices on top.

Step 4Cook on low 5 hours.

Step 5Give the soup a good stir before serving. You want to mix all that deliciousness together!

Step 6Serve with some chopped cilantro, a dollop of Ricotta Cheese and some good quality olive oil. YUM!
