I grew up in Atlanta and one of my favorite lunches .. Cashins. They had the best! French onion. I was addicted by age 7 along with the spinach salad that was very much like the one my Grammy made. Served with a chunk of apple pie and Greenfield cinnamon ice cream ???? This is close to their recipe . Mom somehow got it from them . I tweeked A bit with adding rosemary and red pepper. This like cocka leekie are fantastic healing soups. The power of onion garlic herbs and bone broth or stocks! And the crunchy bread and gooy cheese .. Oh yea! And be patient with onion. Caramelize those things!

Ingredients For french onion soup

  • 3 md
    onions 2 sliced 1 chopped
  • 4-5 clove
    garlic diced
  • 1 tsp
    rosemary, dried
  • 4
    bay leaf
  • 2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 dash
    red pepper flakes
  • 1 1/2 qt
    beef broth
  • 1/2 c
    cognac or white wine optional
  • 4 slice
    toasted french or italian bread 1 inch thick
  • mozzarella
  • 2 Tbsp
    olive oil
  • 2 tsp
    sugar

How To Make french onion soup

    Heat olive oil in pan and toss in onions. Once they start to pop a little add garlic and continue to cook over med high heat until sweated.

    add rosemary . pepper. Red pepper. Salt. Sugar and bay leaf reduce heat and let onions sit but stir every 7 minutes until onions have caramelized and most have turned a bit brown. There will be some bits that get very dark and crisp leave them!!! and some that may still be just translucent. You want the majority to be browned thou. .. The color mix of cooked onion gives the soup a different flavor from each
  • Just hitting boil .. All those flavors have to marry!

    Once onions have caramelized add the beef broth . Stirring until a boil ...boil one minute and reduce heat to lowest setting and simmer off for am hour Option... If using cognac or wine simmer. Add half way through simmer. 30 minutes add wine stir and continue to simmer 20-30 minutes longer
  • Ah ! Married flavors after the simmer and addition of wine.

    Make sure broiler is full on ..Place soup in individual bowls and place toasted bread on top of soup Top with cheese Broil until cheese has melted and has a wee bit of Browning If the broil is slow the bread will soak up the soup so more soup will need to be added. If using A toaster oven or electric stove. You can always toast the bread add the cheese on top broil it and then lay it on the waiting soup just before serving so it doesn't soak as much Dig in and enjoy!
