This casserole dish is a perfect addition to any ham. The sweet pineapple pairs perfectly with the salty crackers. The hardest part about making this dish is waiting for it to finish baking. Brandie from The Country Cook.

Ingredients

  • 1 cup water
  • 1 cup sugar or splenda
  • 3 tablespoons pineapple gelatin mix (jell-o)
  • 3 tablespoons cornstarch
  • 20oz cans pineapple tidbits or chunks in 100% juice
  • 1 cup sharp cheddar cheese finely shredded
  • 1 1/2 - sleeves rita crackers crushed
  • 1/2 stick butter
  • 1/2 cup pineapple juice

How To Make hot pineapple casserole

  • Step 1
    Preheat oven to 350F. Spray an 8"x8" pan or dish. In a medium pot with medium heat,whisk together water,sugar,pineapple geltin and corn starch until throughly combined and all the lumps are gone. Turn heat up to high and let mixture come to a boil and thickens. Take off heat.
  • Step 2
    Drain pineapple throughly, setting a 1/2 cup of juice aside. Add pineapple to pot and stir. While pineapple mixture is cooling,begin making the topping. In a Large ziplock bag finely crush the Ritz crackers. Add crackers,melted butter and pineapple juice into a medium bowl and stir until combined.
  • Step 3
    Add shredded cheese to cooled pineapple mixture and pour into baking dish. Spread Ritz topping over pineapple mixture. Bake in oven for about 30-35 minutes(until topping is golden brown). Serve warm. You can use this as a side dish or dessert.
