easy microwave blanched almonds

It's extremely easy to turn raw skin-on almonds into lovely blanched almonds. There are may videos on youtube that show how to do this. The instructions here are for using the microwave.

Ingredients For easy microwave blanched almonds

  • 1 c
    raw, peel-on, almonds
  • 1 to 2 c
    water

How To Make easy microwave blanched almonds

    Put almonds in a microwaveable bowl. It's best to do one cup at a time so the peel doesn't stick to the nuts before you are done peeling them.

    Pour in enough water to cover both sides of the almonds. Don't worry if some float.

    Microwave on high for 3 minutes. Remove and cool a test nut under water. If the peel slide off that nut easily, your nuts are done. If the peel doesn't slide off, put the nuts and water back in the microwave until the water boils.

    Pour the nuts and water into a colander. Discard the water. Cool the nuts quickly by rinsing with cold water.

    Immediately, separate the skins from the nuts by squeezing each with your fingers. The nuts should pop out. Do this while the nuts are still wet or the nuts and peels will seal back up.

    Spread out the nuts to dry and let air dry thoroughly.

    Once the nuts are dry they may be stored at room temperature in an airtight container for one month or in the freezer for one year.
