My mother in law use to make these every year for Christmas. She, in fact, made dozens of them, both white and chocolate. They were so good. She and my father in law both worked in the kitchen from Dec.1 until the big day, Christmas. They made so many things.. but my favorite were these. They bring back fond memories of her. I miss her but every time we bite into one these she might as well be standing there looking at us. She was a very good cook.My father in law also.

Ingredients For white chocolate peanut butter cookies

  • 1 jar
    peanut butter
  • 1 or 2 pkg
    almond bark or white chocolate chips
  • 1 box
    ritz crackers

How To Make white chocolate peanut butter cookies

    Taking two Ritz crackers and one jar of peanut butter and between two Ritz crackers, pile on Peantur Butter and top with the other one. Go by directions on back of almond bark or chocolate bark for melting these in microwave. You can use and I think it is best this way, to make a double boiler and let the almond and chocolate melt. This way, the warm water underneath will keep the bark warm and not get hard. Easier that way..

    While setting up your Ritz crackers,in a double boiler, be letting your almond bark or white chocolate pieces be melting. Do not put your almond bark or white chocolate pieces directly on eye of stove with regular boiler. Always use anything that you can make a double boiler out of.

    When Almond Bark has melted, drop each Ritz cracker and peanut butter into the Almond Bark or white chocolate. After both sides have dripped until they look like they have been covered well, let them rest until cooled on a piece of wax paper. Can make as many as you'd like by more Ritz crackers, peanut butter, and almond bark or white chocolate pieces. Always have an extra pkg of almond bark. I'm not sure how many you will get from one box, but it always helps to have more.
